Breakfast: Coconut Breakfast Quinoa (recipe
here) topped with cherries, strawberries, kiwi, and unsweetened coconut.
Lunch: Romaine, spinach, green bell pepper, mozzarella cheese, carrot, and hard-boiled egg topped with an agave-mustard dressing (equal parts agave and mustard...nothing fancy).
Dinner: Picnic in the park. I made an egg salad sandwich on whole grain bread (Breadsmith, yo) and ate the leftover salad with some Ritz crackers before heading to the park. I had a few bites of this prepared tortellini salad from Heinen's and some fresh, organic strawberries.
Exercise: 60+ minute walk with the babies in the Bob, plus some picnic shenanigans.
Feels good to get back to on the wagon.
